To begin the year 2017, we suggest you to begin our Word Wine Tour by traveling with you to Canada and more specifically to Quebec.
Every wine lover knows that Canada is the first icewine producer in the world.
With more than 125 producers in its country, Quebec has 234 hectares of vines, more than 2 million bottles sold each year.
Usually, the grape variety for making Icewine is a vidal (created in the 1930s by Jean Louis Vidal). This resistant grape has a high sugar content and is very tasty. It ripens more late and its clusters stand better during the autumn and their grains do not fall in spite of their state of advanced ripening.
To produce this wine, the harvest is usually done between the end of December and the end of February when temperatures are between -8 ° C and -12 ° C.
In Quebec, the method differs somewhat from the rest of the country: the grapes are pick by hand and then suspended in nets until frost.
Ice wines have aromas of candied fruits and the balance between high sugar levels and high acidity offers very pure wines.
